Thanksgiving Memories
 
The First Thanksgiving and Beyond

The first American Thanksgiving was celebrated in 1621, to commemorate the harvest reaped by the Plymouth Colony after a harsh winter. In that year Governor William Bradford proclaimed a day of thanksgiving. The colonists celebrated it as a traditional English harvest feast, to which they invited the local Wampanoag Indians.

While there are many Thanksgiving memories that I can recall, the most meaningful occurred a long way from home.  While J.P. and I were studying in France several years ago we traveled to Verdun, site of the famous World War I battle.  While visiting the battle sites in October we met the superintendent of the American cemetery.  He and his wife invited us to Thanksgiving dinner with other fellow Americans, also far from home.  We arrived in late afternoon, with our contribution to the plentiful meal.  At dusk, as we sat inside the small apartment on the grounds of the cemetery, "Taps" began to play over the soldiers fallen so long ago.  Verdun Cemetery
How wonderful it was to be with newly found friends sharing in a holiday centered on giving thanks.  As "Taps" ended I truly felt thankful for our freedom, the freedom to travel so far from the United States and find other wonderful Americans who shared an appreciation for all that was given to us.

A Start to Your Thanksgiving Menu
 
Prime Rib with Herb-Shallot Sauce
    2-1/4 to 3 hours
 
    1  beef ribeye roast, small end (4 to 6 lb)
    2  Tbsp plus 2 tsp chopped fresh thyme
    2  Tbsp garlic-pepper seasoning
    2  Tbsp minced shallot
    1  cup dry red wine
    2  tsp country Dijon-style mustard
    1  Tbsp butter, softened
 
1. Heat oven to 350°F. Combine 2 Tbspthyme and garlic-pepper seasoning; press onto beef roast.
2. Place roast, fat side up, on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat. Do not add water or cover. Roast in 350°F oven 1-3/4 to 2 hours for medium rare; 2 to 2-1/2 hours for medium doneness.
3. Remove roast when meat thermometer registers 135°F for medium rare; 150°F for medium.  Let stand 15 minutes. (Temperature will rise to 145°F for medium rare; 160°F for medium.)
4. Skim fat from drippings. Combine drippings, shallot and 2 tsp thyme in medium saucepan. Cook and stir over medium heat 2 to 3 minutes or until shallot is crisp-tender. Add wine and mustard; simmer 8 to 10 minutes or until sauce is reduced to 3/4 cup. Stir in butter; season with salt and pepper.  Carve roast; season with salt. Serve with sauce.
 
  8 to 10 servings

Red Garlic Mashed Potatoes

16 medium red potatoes, cubed
1 tablespoon and 1 teaspoon crushed garlic
1 cup butter or margarine
1/2 cup half-and-half cream
1/4 cup white sugar
1/2 teaspoon steak seasoning
1/2 teaspoon garlic powder
 

1. Place the potatoes into a large pot, and fill with enough water to cover. Add 1 teaspoon of the crushed garlic to the water for flavor. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork.
2. Drain the potatoes, and add the butter. Mash until the butter is melted. Mix in the half-and-half, sugar, steak seasoning, garlic powder and remaining garlic. Mix potatoes with an electric mixer until smooth.

   8 to 10 servings

Pumpkin Cheese Pie

1 (8 ounce) package cream cheese
2 cups pumpkin puree
14 ounces sweetened condensed milk
3 eggs
1 teaspoon pumpkin pie spice
1 (9 inch) unbaked pie crust

1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix cream cheese and condensed milk together until smooth. Stir in the pureed pumpkin, pumpkin pie spice and eggs. Mix until well combined. Pour batter into the pie shell.
3. Bake at 350 degrees F (175 degrees C) for 45 minutes or until a knife inserted 1 inch from the edge comes out clean. Serve warm.

   8 servings
