Beef Kabobs with Parmesan Orzo
Total Time: 30 minutes, Makes 8 servings

Ingredients
4 red or yellow bell peppers, cut into 1 inch pieces
2 tablespoon chopped fresh basil or 1 teaspoon dried basil
2 tablespoon prepared Italian dressing
4 large cloves garlic, minced
Parmesan Orzo:
2 cups uncooked orzo pasta, cooked
4 to 6 tablespoons chopped fresh basil or parsley
4 tablespoons shredded Parmesan cheese
4 teaspoons olive oil

Instructions
Soak eight 8-inch bamboo skewers in water 10 minutes.
Cut beef steak into 1-1/4-inch pieces. Toss beef and bell peppers with 1 tablespoon basil, dressing and garlic in large bowl. Alternately thread beef and peppers onto skewers.
Toss orzo ingredients in medium bowl; keep warm.
Place kabobs on grid over medium, ash-covered coals. Grill, uncovered, about 8 to 10 minutes for medium rare to medium doneness, turning occasionally. Serve with orzo.

Sowing the Seeds of Change
Outlook 2008

 

For the past several years, we at CALF News have asked feedyard managers to share their outlook on the industry’s future. Never in those years did there seem to be more issues affecting the industry as there are now. As one of our contributing managers said, “My crystal ball is a bit cloudy this year.”

With questions about the Farm Bill, corn prices, the lack of commercial feeding customers and feeder cattle prices, there are enough questions to go around. A good friend down south said it well, “I feel like a guy who took a duck to a cock fight.” Things have a way of working themselves out. Thanks to Bill Rhea, Bill Brandt and Andrew Murphy for their time and thoughts.

Correctly anticipating what 2007 will bring is about as easy as anticipating Nebraska weather. However, the stage has been set by our previous year. We are facing a tremendously exciting time in agriculture. Ethanol plants have the potential to change cattle feeding at its core; in Nebraska, Initiative 300 may open doors to new methods of farm ownership (pending Supreme Court ruling); branded meats are flooding consumer shelves; political positioning in our global market directly involves the export of our beef; and at home, immigration issues impact our workforces.
